Bite size and finger steaks. The former is more common in Northern Idaho (Lewiston area specifically). ~2-3" chunks/cubes of steak (usually sirloin or something similarly lean and tender) that is deep fried in a light batter or dusting of seasoned flour, I believe the original recipe actually used pancake batter. It is cooked to order and can be eaten rare if desired. Is often served with horseradish sauce and beef jus like prime rib. The latter is more common in South Eastern Idaho and is more similar to a chicken tender but with strips of beef instead. Much heavier breading and is pretty much always cooked well done, the pieces of beef are usually quite thin and typically of lesser quality than would be used for bite size. Commonly served with fry sauce. Deep fried beef isn't necessarily unique to Idaho but the proliferation of these two distinct preparations within the state is something that I haven't seen or heard of elsewhere.

Yeah, you can make empanadas out of literally anything and it somehow always turns out to be delicious. I have a particular soft spot for those out of zorza though.
Zorza is basically small chunks of pork loin seasoned with salt, paprika, parsley and garlic, some olive oil and some white wine. You leave it to sit for a while to let all the flavours mix in, and then usually it gets used to make chorizos, but you can also just cook it and eat it as is, usually with some potatoes, or use it in empanadas as well.
