What about fresh cheese like ricotta? Strong cheese is only good in small doses and usually mixed with something else, but maybe you'd like milder cheeses. And there's a difference between spoiling and culturing/fermenting, cultured/fermented food is actually pretty good for you and you should try to incorporate some fermented food in your diet.
