I have a bowl of homemade alfredo sauce with chicken bits chilled in the fridge which I was going to use to make stuffed buns with, but I don't think I'm going to have time to make them before the mix goes bad. So instead, I'm just going to cook up a little pasta and throw a couple spoonfuls of the mix in with some broccoli and asparagus.

Had big ol' breffis 'n lunch, so going kinda light on dinner.
Breakfast: hot-and-numbing tomato noodle soup with shanghai choy tips followed by a quarter of a pineapple after. Also, coffee with milk later in the morning.
Lunch: pasta with chickpeas and red bell pepper. Sounds lite, but was a larger portion and chickpeas are fairly heavy anyway.
And now: cucumber salad. That's it. Just some ribboned cuke and homemade balsamic vinaigrette. Might have a pork hot dog later, but that's it.

1/4lb bacon cheeseburger smash burger, assembled in this order:

Top Bun
A small hit of Ketchup and a little bigger hit of Yellow Mustard
Three Kosher Dill Pickle chips
A slice of fresh tomato, lightly salted on one side
Baby Spinach
Bacon, cooked just under crisp with salt and a pat of butter (you'll see the answer to the butter later)
Smash burger patty, topped with melted sharp cheddar
Caramelized sweet onion and garlic, cooked low and slow in the bacon fat/butter runoff and a small hit of caribbean yellow curry powder, and a pinch of salt and black pepper
A thin layer of mayo
Bottom Bun

(the buns were toasted using a brushing of the liquid left over after doing the onion and garlic, the pan was wiped off before toasting the buns)

Those thin slices of "beef" might be rat meat. Look it up. And Chinese shops, especially ones in the hood, might be buying up "legal" rat meat from China and having it shipped out here. It makes you wonder why they coat this stuff with such an ungodly amount of sweetness as if to mask the taste or something. I always end with a weird ass after taste in my mouth. Like a funky tinge on my tongue. Beef from stroganoff never gave me this sensation. Or any other American meal with beef added to it gives me a nasty aftertaste or smell.

Didn't use exact measurements but I'll do my best for you, Anon.
Ingredients were:
1 lg cucumber
2 medium carrots
5 very small radishes
2 smashed garlic cloves
2 scallion roots
3 sprigs fresh cilantro
2 inch lemon rind
2 tsp minced ginger
2 tsp toasted sesame seed
1 TBSP gochugaru
1 TBSP salt
2 TBSP sugar
2 cups water
2 cups rice vinegar

Thinly slice the radish and cucumber, julienne the carrots, pack them into your jar along with the lemon rind, garlic, scallion whites, gochugaru, ginger, cilantro and sesame seeds. Make sure your jar doesn't have any cracks etc.
To make the brine, bring the water, vinegar, salt and sugar to a boil in a saucepan until sugar and salt dissolve. Remove from heat, let cool uncovered ~30 minutes. Carefully add your brine to the jar, making sure everything is covered and pushing down any floating veg. Screw the lid on, leave it another 20 minutes, stick in fridge. The end. Of course substitute any ingredients you'd prefer. Enjoy dude.
