Yeah but more of them. The CO2 diffuses throughout the bread but there isn't MORE C02 because fermentation has already peaked and the yeast isn't converting anymore sugars.

I was worried about being dense at first, but turns out it was incredibly fluffy, def one of the best crumbs I've eaten
the crust still didn't get to that crispy point, my oven is highly temperamental, I just don't think I can get high temps from it

honestly, pic related would be my peak for a everyday bread
I don't like you cut round loafs, but they're easier to do than long ones
the only way I can think to improve, which would be more springy and better crust, would to get a proper oven,
or try to improve on this one with stones, which might be an idea
