Don't use your burner, use your oven. Wash the pan again with soap and water and scrub that circle off. Coat the whole pan, inside out, with bacon fat, lard or clarified butter, but no regular butter, it has water in it. Put it in a cold oven upside down over a pan to catch drips. Turn the heat to 350 and when the oven has fully heated set a timer for 1 hour. After an hour turn off the oven and carefully use a paper towel to wipe out any excess fat and leave it in the oven to cool.

r8 my seasoning routine
I was it almost every time i use it with a plastic scrub brush and cold water, and dry with a dish towel
then I turn the burner on medium high and add extra light olive oil and some celtic sea salt and stir that around with a silicone spatula until all the salt dissolves and i start to see smoke
turn off the heat once it smokes and let it rest overnight, or on a low burner for a few hours to really soak in the oils
then in the morning I come and buff the excess oil out with a paper towel
I dont like heating up the oven just for seasoning

it isnt really seasoning desu, but replenishing the oils after washing it and drying the excess water on the stove
I wash it about once a day, but I use it multiple times a day usually for different dishes. if there's no crumbs or significant chunks of food left on it I just scrape it clean with a metal spatula

I noticed when I wash it with filtered water the seasoning also stays better than when I use cold tap
hot water results in the dullest pan

I normally use really hot/boiling water right after I'm done cooking and scrap any stuck solids with either a wooden spatula or the plastic brush
then I rinse again with normal tap water and a regular sponge and leave it to dry with the rest of the dishes and pans
haven't had it for that long, almost a year now so maybe I'm still being overcaring and dedicated to it, but it's been really a non issue and the steaks that come out really make the difference

The center there got too hot. When I got my first iron pan I was super concerned with getting it as hot as possible, that is nonsense. If it gets to hoot the oil just completely burns off. It needs the right temperature, not as much as possible.

Also, I tried olive oil and it just left me with a temperamental, soft and not very non-stick coating. Then I tried coco-nut oil because that was the only other oil I had and it worked perfectly. Saturated fats make a harder coating. Olive oil and flax seed are retarded memes. I use lard for seasoning now. It's the best.

I just picked up a carbon steel pan at goodwill, but the seasoning is pretty terrible. I have been trying to season it on the stove but it doesn't seem to be working very well. Am I supposed to do it a lot until its develops or do you think I'm just doing it wrong. Should I scrape it out and try to take the seasoning off somewhat and restart from scratch?
