Going to be cooking some zucchini bread tonight. Havent made it in a few years and following a new recipe. If it turns out well, great. If not, we can just forget this entire thing happened.

Cool enough, so here's the cross.

Could have used more zucchini. It could easily be doubled for what the recipe calls. Also, instead of all oil for the fat I would cobsider 3/4 oil and 1/4 butter.

Hmm. Looks alright. Mine is never brown but I assume that's because I don't use brown sugar when making zucchini bread. It also looks a little dry, you might need more wet ingredients. I use lemon juice and zest along with the zucchini. It gives it a more tart taste, so if you want it a bit lemony try adding the juice and zest of 1 whole lemon.

I go around campus for my job working with the fat gross smelly old guy no one else likes to work with. We deliver packages all over campus and snag up any office treats we can along the route. We talk about food, sports, society, work, etc.. He pressured me to try my first zucchini bread when I thoughtf I grabbed a banana bread muffin. It's really nothing to get excited about unless your zucchi was getting old. His name is John, he's 60, and he exclusively drives the big truck.
