Skewer, grill and enjoy over rice. I'd recommend soy sauce, honey, olive oil, with either lemon or lime. Skewer with small tomatoes and cocktail onions. You can easily reduce the marinade into a decent sauce to eat with the rice.

OP here.
I decided to be a pussy and throw them in a stir-fry instead of eating them straight.
Butterflied them and rinsed them to remove blood, threw them in a hot wok with oil, garlic, ginger and anise, got some veggies in there, soy sauce, thickened to liquid with corn starch, served on rice.
they're nice and chewy, tastes like thigh, egg yolk, and blood.
I liked it but the wife did not.

I usually eat turkey hearts, they are way more meaty, there is also a certain specific taste that I find pairs well with mushrooms. The texture is rubbery but it's not a problem after mincing
