When people who look closely at Nutrition Facts, the "aka Food Police" then stuff is found out to be hiding transfats, rich amounts of sugar and fat comparatively speaking. WTFwhy does Wendys have less fat in their chicken sandwich than ChikFilA?!! Outrage. Well let's start serving all mayo in a packet, so it's not counted in the overall calorie and fat count! That'll help business.

REAL Buffalo sauce contains butter. It's a mix of a 1) hot sauce that is pretty neutral and clean, and cheap so a Frank's Red Hot that counts the same $ as aTabasco half the size, 2) Butter, 3) lemon or cheaper vinegar, 4) fresh pressed garlic or cheaper pasteurized garlic (should be in there).
Butter, though, isn't quite shelf stable, so you'll see some weird stabilizers to keep the red pepper particles from settling or separating is bottled up products. Hope these clues help you figure out how to recreate your memory or this "perfect" sauce.
