Fried in the pan with olive oil, basting the yolk with excess olive oil until the yolk is cooked where it's not runny but not set either. Spiced with salt and pepper. Served on toasted bread with butter.

I don't scramble the eggs when I make Menemen, so I don't really know what the difference between the two dishes is, if there even is one. I do however mix the egg whites little bit into the sauce. The yolks have to stay whole though, they're the best part.

1 whole diced onion, a tin of anchovies chopped, some chopped garlic, a can of crushed tomatoes, staple italian herbs and spices like oregano and parsley, then 6 eggs or whatevrr you can fit. Cook the onions until they get translucent then add the tomatoes and other stuff for a while and let it reduce. Season for taste then once the tomatoes are properly cooked add eggs and put a lid on it. After a while it should be ready to eat. I like the runnier eggs though so i pretty much only leave the lid until theyre all white
