Backstory:
when I was about 14, I visited the northeast of the US. We went to a small town in some state or other called something like Woonsockit. In any case, we had these long roll sandwiches stuffed with butter-drenched and celery-flavoured lobster meat with chips/fries, gherkins and wedged lemon served alongside. They were delicious.

Actual question:
I want to do a semi recreation of an American-style lobster roll, albeit with prawn/shrimp instead of lobster and dressed with hollandaise rather than dripping with butter. Would such a thing be a culinary taboo to Americans or would it be a delicious variation? Would you eat it?

Hollandaise would be fine.
It's mostly melted butter.

I would prefer to go with a remoulade, as I think it would match the lobster better.
Not a spicy remoulade, however. A tart remoulade.

Now that you mention it, maybe a garlic-flavoured hollandaise would be even better. The only thing I disliked about the sandwich was how messy it was to eat so I though a hollandaise, which it's thicker consistency, would make far less of a mess. Remoulade would work, too, but as I hate half the herbs that go into it, I'd rather go with hollandaise here.

Very little would be considered culinary taboo here. You can pretty much do whatever you want, as long as it's tasty and you don't pass it off as a specific thing (ie, a "new york style hotdog" when you've added ketchup)

Wrong. I came to Maine hearing all about lobster rolls and how good they are, but all I got was a hot dog bun with some lobster on it. A slather of mayo and some Old Bay sprinkled on top was the only dressing. I paid 20 fucking bucks for it. Came back home, to Indy of all places, and found a food truck that sold lobster rolls with a spicy giardiniera on it on a proper toasted bun... Now that's the right flavor. Locals try to say all you need is the lobster on a bun, but honestly, you need to give options because I've asked a lot of people who travel and just about everyone I ask says they were disappointed when they had their first lobster roll.

Opinion of a Mainah, lobsters are overrated sea cockroaches that feed our tourist industry. Totally agree that shacks need to offer more condiments. It’s a shame the locals didn’t direct you to an oyster/fish fry place (Fried scallops/gulf shrimp are way better than lobster IMO).

We weren't visiting Woonsocket specifically. Just passing through. We'd asked someone at a petrol station where to eat and what to get that's a local speciality. He'd suggested getting lobster rolls at such-and-such place and gave directions. So we went. We ate. And we continued on our way.
