I went to the sketti restaurant and the waiter tried to mix my sketties for me! I turned the table over and ran out crying like a little bitch.

It's generally considered rude to assume how much sauce one wants on their noodles, so you just let people take whatever they want, however, if you're a parent feeding the family in all likelihood you probably pour the sauce into the noodle pot and mix it before serving. either way is fine and anyone who says otherwise is a stupid purist and is to be ignored.

Because it looks prettier to normies. I don't know anyone besides myself irl that actually finishes the pasta in a fry pan with sauce and pasta water like you're supposed to. However if I was cooking for a shitload of people I wouldn't wanna finish every serving in the pan, but I wouldn't serve pasta completely naked. I would mix some sauce with the pasta and offer more on the side.

In old times of general scarcity, pasta and sauce were often mixed together in the plate to avoid

1) Having to wash a large pan or pot (because it takes a lot of water)
2) Wasting any sauce

The last few noodles were often used to try and recover the sauce that was stuck to the saucepan, in households, so it was associated with scarcity even more.

When a lot of Italians migrated to America, nearly all of them were of poor origins so had this habit.

As traditions go, even today there are remnants of this in southern Italy, and many people do this for estetics.
