What are the best pasta dishes without cheese?

I usually make pic related, which is cream, creme fraiche, tomato, basil, garlic, mustard and mozarella.

adding cheese to the sauce itself is mostly an american thing. most sauces people make in italy don't have any in it it and you just put it on later if you want for yourself. ie aglio e olio, bolognese, tomato sauce

Shrimp scampi looks pretty good. Basil pesto, but it usually has parmesan you can probably omit it. Something with olives, or cold pasta salads with them or blasphemous ones like tuna mayo.

But I would say "frutti di mare", both rice or pasta (linguine is the best) is good.
It's basically shrimps, prawns, mussels, clams and squid.

Which cheese? There are numerous types with extremely varied flavors. There are plenty similar to mozzarella, if you want mild cheese then just use mild cheese.
