It depends on the drink of course. Whiskey I will sniff and drink relatively slowly. A cocktail like an old fashioned I will try to drink at a reasonable pace so the ice cubes doesn't water it out too much. Something like my favorite Gammel Dansk (a danish herbal digestif) I will have as a shot, simply because that's how it should be drunk.

I'm Danish too, and while there are some herbal liquors I enjoy, Gammel Dansk is not one of them. I can't stand the stuff.
Mümmelmann and Boonekamp are both much more to my taste. There's Underberg too of course, but that tends to cost more than the others and I don't think it's actually better.
I want to use these "bitters" in my cooking but I think I need to use a lot more than I first assumed. I'm sure I can find a cooking use for it with a little more experimenting. Maybe just pour some on a steak when it's practically done.

I like the sting of drinking spirits straight. I like my vodka from the freezer but most other liquors I have at room temp and just sip. People look at me funny when I say I sip tequila, but I like the taste of it.
I would not drink a liquor if I disliked the taste so much that I had to aggressively mask it with salt and lemonjuice.
I like Islay whiskies and dark rums the most.
