It was in the fridge when I was looking for meat to toss in. Sunday gravy always has meat simmered in it, usually whatever leftover cuts you have from the week before. Gives the sauce a nice meaty flavor.

This is actually what is done when making Neapolitan ragu which Italian American Sunday gravy descends from. They simmered whole cuts of meat in it which would be served separately as the main course.
