What does salt do in a brownie recipe? I saw some lady making brownies on Youtube that looked really good but a lot of the people in the comments are saying they have way too much salt. If I make them but cut the amount of salt in half would it just make it taste less salty or would it affect how they actually turn out, like the texture?

Salt contrasts the taste of chocolate. It's an enhancer that you see sprinkled on brownies or chocolate cookies.

No that seems stupid. Can someone else respond?

Salt makes food in general taste good and is generally used to contrast chocolate. Put less salt in the recipe one day, put the suggest amount next. Decide which you like better.

this person is actually right tho

a little bit of salt will enhance the flavor

Would less salt or even none at all make them come out like bricks or chocolate flavored wonder bread or would they be exactly the same just less salty?

Nah he's right.
The best part of me dear old mum's chocolate chip cookies is how she mixed it with a fork instead of a proper whisk, so they were salted unevenly.

they would have the same consistency or texture
it's just the flavor that would be weirdly off
salt enhances sweet flavors and covers/nullifies bitters

I'm making them but with one teaspoon of salt instead of two. Imma put some black volcanic salt on the top when they are half way done.

I know you're memeing but this is one of my biggest pet peeves. When someone asks me a question, i respond with the correct answer, and they just say "no" or "that doesn't sound right" i feel like bashing their heads into the cement until their own teeth penetrate their skull and lobotomize them.

The consistency is different, brownies are thicker, chewier and form a crust around the edges.

Generally it is denser and moister than a cake, almost like a cake recipe that you fucked up. But there are cake-like brownies as well.

Intensifies the flavour. Does so with many things... One of the main reasons people find fast/processed foods addictive is because they're packed with sodium.

Not only does it make things taste saltier, but it also brings out the flavor in basically anything, salty or not. Salt is magick.

Paste the recipe so we can analyze it. For people to comment on it? It might be too salty. Who comments? Ya know?

1) maybe someone is confusing kosher salt for table salt
2) maybe it has "salted caramel" added to it, and it's a new flavor for someone
3) it's a shitty recipe out of balance

Is there anyone who prefers cakey? They're utter shit. Ideally it's chewy+fudgy with a corner piece so you get the contrast of the "crispy" edge as well.

>> No.14350995

OP here. I made the brownies with 1/2 the amount of salt that the recipe called for. They aren't very good tasting. Everyone in the comments in that youtube video who said they tasted like pure salt should die with festering boils.
