I've bought a trout. Good looking fella! Now, I want to do something different and therefore need your help. I want to grill it. Low and slow.
All I've got is a Webber kettle grill. What temps and techniques should I use? And NO, I have no wood to smoke it. Happy to learn!

No wood?
No wood at all?
It literally grows on trees.

Anyway, if you have a few disposable wooden/bamboo chopsticks... set one on fire, smell the smoke. If it seems pleasant enough to you, and NOT PINE, it will probably work for adding a smokiness.

Cornhusk, cornstalk, corncob, straw, dried leaves, twigs, walnut shells, grass clippings... have literally seen them all used to add smoke flavor. Just stay away from softwoods (evergreens), as they tend to have pungent oils which make it taste really weird.

Wow, I've got bamboo in my garden. In fact, the south side of my property is full of large bamboo. Never thought you could smoke with it. Can I use it as is, or should I dry it out or something?

But let us assume like I can feign helpfulness...
Descale as needed; further assuming the guts are already removed.
Season the cavity with coarse salt, neatly stuff with orange slices and some shaved ginger, tie closed with twine.
Set up for indirect heat on the grill.
Oil the cold side of the grill (olive, whatever).
Lay the fish on, wait 5-6 minutes. When the fish is ready to flip, it will readily release from the grate.
Repeat.

What a beautiful trout OP. It's been a long time I haven't had one. Fly fishing trouts is a really satisfying feeling, I always release them.

It's easier to set on fire if it's dried out a bit.
Chop some down; guessing 1-2 weeks should be enough drying to start experimenting.
Shouldn't take much to add a little smokiness.
This is part of the flavor imparted when people skewer things on bamboo and then the skewer chars on the grill.

Should also add... being a grass, bamboo should be adding wisps of mild smoke flavor, not that smack you in the mouth barbecue that mesquite or hickory would.

If you don't like AMERICA you can move to venezuela with the bartender, how do you like the fish now? Play stupid games win stupid prizes, that's what my dad always said. Personal responsibility, they don't teach it anymore because having faith in GOD is now a hate crime.
