I start with 2in thick bone in ribeye, coat liberally in salt, pepper. Place in foodsaver bag with a couple sprigs of rosemary. Double bag and seal. The double bag is important because of the bone. Sous vide at 135 for 3 hours. Remove from the bag, remove rosemary, and pat dry. Then put a good crust on it with a searzall. Absolutely perfect every time.
