Make a spice paste out of pic related and whatever spice flavors you like. Omit the salt because this stuff is salty.

You want to use a butchered chicken, not a whole bird. Whole bird roasts are over-rated nonsense. Coat the pieces with your spice paste and roast in a 325 oven for 45 minutes, add your breast pieces 10 minutes after the rest of the bird.

Perfect every time.
