I always end up making a steak sandwich, even if it's an expensive prime rib-eye, especially if its a rib-eye. The only exception is a flat-iron steak. Those are fajitas.

>bag it up
>give it a hot bath
>sear the leftover fat etc
>pat steak dry and clean once done
>torch it
>rub it in the rendered fat
>another quick sear
>cut it up

I agree with the other poster that pic in op is trash. But I will give you my go to tri tip seasoning.
Salt. Ground pepper. Garlic powder. Onion powder. And cover well with tajin. Cut the silver skin but leave the fat cap. Cook slow and low.
