You can definitely tell it's roasted.

Depending on roast and grind other notes appear.

Try a french press and then try som turkish coffee. You'll see that there are big differences even with just black coffee..

Also, just buy some and try. Super cheap.

How come whenever somebody is describing the taste of coffee, It's always something vague like "strong", "weak", "mild", "sharp", "bold", "slightly acidic"? It's never specific like sweet or bitter.

Depends on the coffee.
And that's not even adding flavors.
Baseline coffee tastes like... coffee. Hot, brown, blend of bitterness, acidity, and a mild natural sweetness.
Some coffees also have a natural caramel flavor in them.
Or fruit or floral flavors.

But yeah, "tastes like brown water" is more or less right.
