Definitely. There was a Milk Street episode recently where Chris interviewed a journalist who basically stajed in a French Michelin starred kitchen for a while. After a few months (I think it was maybe 4) his take away was that if you want to make the best food in the world, you have to have extremely high standards and run an almost impossibly tight operation. One example he gave was that if you didn't show up early, all the cutting boards would already be taken, so you'd have to figure out how to do your shift without one. Beyond that, and what he thought was harmful to running an amazing kitchen, was straight up abuse. Folks got stock pots thrown at their heads, people would be backed into a corner and yelled at/slapped, racist and sexist insults would abound. I think the telling thing was his description of the transformation of a young apprentice from just a quiet kid trying to make it through to an absolute asshole. It's a situation where you either adopt the abusive behavior or you wash out.

If I showed up to prep and there literally weren't any cutting boards I'd be like "alright" and go sit down until there were. Restaurants have always been abusive places. Cooks are expendable. Wolfgang Puck, Pepin, Keith Floyd, MPW and basically all classically trained chefs will tell you this. Kenji just seems like a bitch, it's like going into the military and getting mad about hazing. It's unfair bullshit but it's how it is. Modern kitchens as far as I know are much softer now. Gordon is also selling an image, reality TV, his functional kitchens aren't at all like that from what I've heard and no high level kitchen will be. I doubt gordon has had much of an impact at all except on normie perception.
