Looks excellently satisfying, all that oozing sauce and cheese out of the sub roll.
I forgot that I used to buy the MichaelAngelo's frozen family size of eggplant parm and tuck that into fresh bakery french bread for a jiffy dinner. It was one of my lazy nights to buy salad bags, bread, provolone and frozen eggplant.

You might have just given me the idea for Father's Day dinner now. Thanks anon! I bet he would enjoy a platter sized chicken parm dinner.
