No, they are not a meme since they are good at searing while minimizing cooking of the meat underneath. The gold standard is the Bernzomatic TS8000, which I have and use often.

I have one of those $15 crème brûlée torches that you fill with lighter fluid in my house and I use it for small things like melting cheese or quickly flaming tomatoes or bread slices.

I tried using it on salmon but I wasn’t impressed, also I stopped after a couple of minutes because I was afraid of overcooking it (no it didn’t happen).
I’d be interested in trying with a more powerful one.

This. Bernzomatic kit is less than $15 and the canisters are $3-4 each. With the same torch i can solder copper pipes in the day, carmelize my creme brulee for dessert and smoke a fat dab of wax as a nightcap

I'm in Europe and the Bernzomatic costs 150€ which is offensive but on Amazon there are the chink clones which I wouldn't even touch with a stick.

I went to my local hardware store and bough pic related kit for 22€, it says that it burns up to 1800C (3300F) but I still have to try it.

The things and way I cook never really need a torch. I can see it being handy for certain types of cooking, like creme brulee and fish and shit, but I don't make it enough to justify buying one. I find my oven's broiler does a decent enough job for that crispy top.

I use bernzomatic propane torches. The ones with the self-ignition triggers are the best kinds. Not a meme. I torch meats, fried egg whites, cheese, countless other things that need just a little more spot-heating or browning. Pretty useful tool.

I use some mapp gas and nozzle from amazon, gets hot as fuck and burns all of the gas before it hits the target.

That's a fucking terrible, ill-thought-out design.

What you want is a primary diffuser and heat capture area followed by a working surface. I would suggest you make a parabolic 'cone' as a shroud to go in front of the torch. If your model has an air intake at the rear then this could mount immediately onto the outlet, but it if doesn't then you'll want a backwards-flaring collar around an open ring, then a couple of layers of food safe wire mesh, then a very fine wire mesh as a working surface.

What can I place under the steak that I want to sear with the direct flame?

I have pic related but I don’t know what to put under. I used my random metallic oven tray covered in aluminium foil but the flame hits the aluminium sheet so I don’t know if it’s safe.

What’s a safe material I can put under the rack? I have my cast iron pan but I don’t want to damage the seasoning

I have like 5 cast iron pans and enjoy them, but at this point I feel like you're using them just for the sake of showing them off. I mean, neither pancakes nor eggs are best made in cast iron, and I can't even begin to fathom what the fuck you're doing with a torch in that pic. Like, if you want want a heavily browned pancake you cook it in a cast iron pan; there's no need for a torch at that point. On the other hand, I've only lived at a place with electric elements once in my life (and vowed to never again), so maybe you think that cast iron gives you more control, but even that makes no sense.

It helps to solidify the egg before flipping it for over-easy, so you don't overcook the yolk. Instead of fucking around with a lid and a tablespoon of water to steam them.

Carbon steel is better in many ways.
On the other hand, if you have an old hand-me-down cast iron pan, go ahead and use it and make your ancestors proud.
The degree of improvement offered by carbon steel probably isn't worth bringing everlasting shame to your family.
If you're buying new cast iron, look hard at carbon steel. Not much more.
