Not traditional, no. I would not. I think the real issue is the lettuce doesn't need to be wilted and cooked down from the searing heat of steak that just came off a cooktop.
Cheesesteak (and chicken) subs are typically thinly sliced raw ribeye (shaved even) cooked over high heat griddle at the same time as onions and finished with cheese (creamy processed cheese sauce if you are actually in philly), and optional additions to "bomb" the sub with peppers, mushrooms, too. You can pick which cheese you want, and you can double your meat it to really stuff the sub roll generously. It's always cooked to order, combined and chopped with the side of the spatula by the cook to be a homogenized blend, before the cheese is laid on to melt. There could be a squirt bottle next to the grill, for a deglazing step by the cook before the cheese to lift up some of the fond, or to sprinkle on some seasoning.. The sub roll is stuffed, and it's done and wrapped after just an offer of some house hot sauce or "hot peppers", pickled jalapenos or banana peppers, salt, pepper, and oregano. That'll be it.

But, it doesn't mean I don't see people order a bunch of assorted salad toppings on top of a sub, anyway, or god forbid mayo it doesn't need. Ignorance to some degree, or they just love mustard let's say, and they just get used to eating their creations. But, I also think it's part of the culture of "free" that someone wants all of the available toppings while there at sub shops (meant for other subs), but the worker might even ask you point blank if you want all the offerings, or worry they're going to get a complaint if they don't ask. There's a place near me that I get a great blackened chicken sub tdf and probably has about 4 chunked up chicken breasts. I will actually sometimes add some nutrition by asking for spinach leaves, raw onion, a few pickles, which will all wilt nicely, in fact. Lettuce no.
