It’s also easy as fuck to make but people don’t know this so it’s ok.

Protip: use a frozen and eviscerated octopus because frozen octopus is more tender thanks to its fibres being broken by the low temperature

>boil octopus until a toothpick encounter almost none resistance when you stick it in the thickest part of the tentacle (35-45 mins for a 1,3 - 1,8 kg octopus)
>Cut the eyes and the beak
>Cut the tentacles and remove the excess skin (it comes off by itself)
>Open the “head” and clean it

Choose

A) stir fry everything in a pan with hot oil like I did until crispy

B) chop the tentacles in slices and the head in strips and put everything in a casserole with boiled potatoes (not 100% done but still with some consistency that doesn’t make them fall apart), add a generous amount of EXTRA VIRGIN olive oil, add some salt and black pepper then let it reast overnight in the fridge and add another layer of oil and mix before eating it (let it rest half an hour outside the fridge before eating)

I repeat it’s easy but you have to buy a frozen and already eviscerated octopus.

Octopus is one of my favorite seafoods. I've had no problem in the past, but since learning about how intelligent and consciously aware they are (and even kinda friendly sometimes) they can be, I've not had a lot in the recent past. I won't turn it down if offered to me on a plate, but I don't go out and purposefully shop for it anymore. I've actually kinda been thinking about making my way towards a more vegetable-based diet anyway.
