My grandfather always used to tell me to put a potato in the oven when its dinner time. Just do it without thinking. Let it become natural. While it bakes you can consider what you want to eat. If by the time its finished you haven't come up with anything at least you'll have a baked potato.

i can slice a potato into short french fries in like 40 seconds now

every morning for 2 months shelter-in-place, i would wake up, start a fire heat up coffee while cooking a french fried potato over oil in a pan with garlic, salt, pepper.... you think it would take like 10-15minutes but for some reason the process would take like an hour start to finish

Boiling is faster. Plus the splash of vinegar (or mayonnaise) takes it to a whole other level taste-wise. I agree oil is a good substitute for the butter though. I use garlic infused olive oil if I go that way.
