Post recent dinners. Today I made the https://amazingribs.com ribs except on an abbreviated schedule because I started at 3pm and didn’t want to eat after 9. Hickory lump charcoal in a weber grill. Hot zone to the left, water tray in the middle, ribs far right. Two applications of wet peach wood, after hour 1 and 2. Temp mostly about 300F plus or minus 50 degrees as I was drinking a bit. Total cooking time about 3 hours.

Boss interrupted me half way thru with a phone call and brocolli got over steamed and lamb got a nice swear, but a touch raw in the center. Also didn't have any red wine so the reduction was a touch heavy. Overall, not bad, 6/10

Barley risotto with beets and beet greens, glazed carrots, and homemade bread with beet/carrot green pesto. All the beet and carrot ingredients were from my garden so that was nice.
