What’s the best way to make caramelised onions?

I always use butter and golden onions.

Neutral flavor oil + onions.

Heavy bottom pan.

Low heat.

Salt - some vinegar.

I like to use olive oil and butter, I like to get the pan hot then drop the heat and go slow, adding salt after they brown a little
I don't really use red onions cause I like them raw more, and I don't like sweet onions because they almost have too much sugar and can burn easier
also add some vinegar at the end to season

What if I don’t like vinegar?

Also I’m planning to use the funds in the pan which I cooked the onions in to make a sauce using the fats and the juices of the pork tenderloin I’ll sous vide (the fats will be oil+butter in the cast iron pan after searing it).

The vinegar is for deglazing any fond as well as acidity. I find white wine works better personally, I never use vinegar unless I don't have wine to hand.

some salt in the beginning helps them break down quicker, and vinegar is better than wine for this, at least for me. it gives a bit of much needed tartness.
