Blue cheese burgers are my favourite kind of burger at the moment. Just had this one with mayo, onion, tomato and blue cheese. Was really good.

Medium-rare, or even rare, burgers can be great. The meat has to be good though and I don't like a very fine grind because that's just meat paste.

Course grind with very little connective tissue. There are plenty of raw beef dishes around the world, but think of as a browned tartare.

You understand that a burger is not the same as a steak, right? Most commercially produced burgers are compiled from different pieces of meat, each of which can be highly variable in terms of any residual parasites, etc.

No one is forcing you to use plastic tube beef putty from Walmart, and good hamburgers don't have to be made from steak. Various cuts of meat can be used, even scraps so long as they're cleaned. Obviously whole cuts can have differently flavors and there's a lot more too it, but you sound like a fucking idiot who learned about their meat from youtube clips.
