cooked some pasta somewhat al dente, fried some chopped bacon with a bit of butter, once its getting crisp throw in minced garlic, let that go less than a minute and add some green onion and the marinated artichoke, then pour in some cream and adjust the heat so it doesnt burn but simmers a bit, add a bunch of cracked pepper and i think i threw in some red pepper flakes and let it thicken a few minutes stirring constantly, then i stirred in some fresh parm and taste it, might add a bit of cream to get it where i want then turn the heat off and toss the pasta in it till everythings hot and coated

you can really get creative with the alfredo sauce and put whatever you want in i just try to order it so nothing gets burnt

I made a creamy breakfast casserole. Eggs, cream, milk, S&P, dollop of sour cream, cup of cheese. I sauteed onions, green peppers, and mushrooms in a pan til they were cooked. Then I mixed it in the whipped up egg mixture and stirred in some tomato chunks. I poured it in a small dish I sprayed with cooking spray and baked at 350 til it was nearly set, topped it with cheddar cheese and some bacon I cooked. My family liked it. I got inspiration from called BrownGirlCooking on YT. If I could do the recipe again I'd do a crispy hashbrown layer on the bottom, since I'm not a ketofag, or maybe some sausage and bacon inside it too.

The dinner I've made 18 out of the last 21 days:
>take 1 sweet Italian sausage
>take the casing off
>smack and roughly chop somewhere between four and six garlic cloves
>fill a pot a quarter of an inch with water
>dump the garlic in
>if the sausage was frozen, drop the sausage in before the garlic, if not drop it in once the water is mostly evaporated
>cook the sausage, break it apart
>once no more liquid is in the pan, ass salt, pepper and chili flake
>stir together, add a few good spurts of tomato paste
>add in a bit more than a cup of dried pasta, something like shells or macaroni
>cook that a bit, scraping the fond off the bottom
>after the tomato paste is no longer bright red, add enough water to cover the pasta and stir in some chicken bouillon powder (could also use ready-made stock but shit's too expensive)
>cook until sauce is thick and pasta is done
>if pasta isn't done yet, add a bit of water and cook it down again
>if you did it right the garlic should be soft and slightly sweet
Spicy, satisfying, easy, cheap and good for one person because you can "peel" the sausages and then freeze them so you can thaw them up individually.

Finished cooking. By the time its ready for freezing this will turn so thick itll be almost creamy. The meal (or more correctly, meal base) is vegan, I am not. It is well spiced. Imagine the deep umami of an asian vegetable dish mixed with the flavours of just-hot-to-the-mouth chilli and cooked fresh black pepper, ginger but more savoury tumeric rich and tempered off with the most subtle undercurrent cinnamon. This makes a meal that is well spiced but overall savoury and can be used as its stew, watered to soup, bbq'd to stir fry or used as a side.
The meal costs probably less than 1 AUS dollar a serving, none of the worries of meat and is capable of surviving the problem of picky eating habits by being malleable to further cooking.

I'm trying to do more baking lately. Especially since I finally have an oven.
Tried making a loaf of bread using skyr instead of water or milk. I did use a little bit of water to dissolve the yeast and wake it up, but otherwise the only moist ingredient was skyr.
The dough was very sticky and I couldn't knead it into something with any decent elasticity. I proofed it in the fridge overnight with very little optimism.
Came out better than I had expected, though. Dense but not very heavy. Tastes really nice.
Certainly good enough for sangewedges I can bring to work for my lunchbreak.

In the future I will probably go back to baking with water and maybe add a heaping tablespoon or two of skyr to that, though.

Why skyr? Because the Lidl app kept giving me gifts of it for free. so I just collected on that and froze the stuff.

Tomorrow; possibly some kind of trussed oxroast. The leftovers from that should work as a decent sangewedge ingredient I think.
