I use it for coloring mostly. When I make pad Thai, this stuff makes it that red color I'm used to seeing at Thai restaurants. That and Sriracha. Amazing how much the color affects my enjoyment of the dish

I've heard just about the only paprika worth using is smoked and even then you need to use it in excess of what you think you should or you still won't taste it.

Personally it's something that doesn't have a distinct flavor but I can just *tell* if a dish has it or not.

this is the only paprika i've bought/used. Im not gonna buy another one till i use it up. Tasting it, it seemed kinda bland in small quantities, and in larger ones a little bitter. I really dont know what to use it for other than red food coloring. Should i buy a different paprika?

Most preground paprika isn't going to have much flavor especially since it sits on the shelf for a while. That happens with any spice but milder ones usually just become bland and bitter.

You could try to buy any kind of dried red peppers to make your own, or buy fresh ones and do it yourself. A lot of paprika is just dried and ground red bell pepper, which should give you an idea of what kind of flavor it should have.

Smoked paprika does require you to pimp it hard, but I'd definitely say it has a distinct flavor. Might just be because it's what ticks my boxes, but holy shit is it a ticket to flavortown in and of itself. Not to mention all it needs to get to the next level is a bit of salt and cayenne pepper

I use paprika but honestly, not as often as I could since I always have several red bell peppers in the fridge or strips in the freezer.
It's essential for some toppings, esp nice with creamy things: like on top of deviled eggs, sprinkled on cream cheese stuffed celery, coating the outside of a big ol party cheese ball. Sometimes I grate a few of my leftover cheeses, add cream cheese or sour cream to bind it all, and in goes the paprika (liptauer cheese) with a few other herbs and spices.
When you don't have some great amount of bell pepper to add into a dish, this can stand in a bit, and adds that mild pepper flavor, so I use copious Tablespoons into the chili pot, cajun one pot meals, even soups.
But, I will buy a fresh Hungarian branded paprika to use about 25% of it in a recipe, when I do a chicken or pork paprikash/goulash kind of idea. Not the goulash soup recipe, but the stewed meat with pan juices, lots of mushrooms and baby pearl onions, and finished with a stir in of sour cream and paprika to thicken it. Thick buttery and parsley'd egg noodles with it. It's also a good way to thicken up the remaining stock for day 2 of a crock pot chuck roast or beef stew.
