op what you're saying is true to an extent, but it's not because of hard to find ingredients or anything like that. and by the way, you should consider the fact that ingredients that are obscure to you now, wouldn't be obscure to peasants. doves and mountain herbs wouldn't be that hard to find for them. cured goat meat is hard to find for me right now, doesn't mean that it would be hard for an old timey peasant. and another thing, just because a dish was eaten or created by peasants, doesn't mean it was eaten by them all the time. it might just have happened on special occasions. idk how it is in the west but here in slavland, my grandparents wouldn't eat meat very often. slaughtering a chicken or a pig was a fairly rare event. and you could only preserve so much of it. idk about you but when i know a big meal with a quality main ingredient is coming up, i prepare weeks in advance and assemble the different components of the dish. doesn't mean i have all access to all that stuff all the time..

anyway, it's that a lot of the modern recipes we know and think of as old were developed quite recently (sometimes even as recent as the 20th century like carbonara) and while some were done by fairly low class people, they weren't developed by actual "peasants". and with some exceptions, the oldest "recipes" we have nowadays are cheeses and coldcuts, not dishes.
and the real developments and breakthroughs were made by court chefs, aristocrats and generally higher class people

Isn't the point that shit what peasants ate was stuff that was not great but it was cheap/easily available. Nowadays because of the miracles of modern production techniques all the good stuff is available for cheap, so the previously cheap stuff gets sent elsewhere (dog food or fertiliser or whatever).
So when you want to make what a peasant would have ate, you need to ask for it special, and because you're asking for it special it costs more and is harder to find in your local supermarket.
Also peasants lived on farms and in woods and shit so they would get the weird bits off animals for free, and could spend a day foraging for weird nuts and berries and mushrooms and shit. You probably don't live near the same wood a medieval French peasant lived near so the stuff that was within easy reach for them is specialist mail order shit for you.

I actually just adapted a recipe from my dad who spent 15 years in Africa as a missionary. He's the kind of cook who doesn't do "measurements" so I had to guestimate to get it down on paper. What makes this different from American southern greens is they're not boiled in lots of liquid, but simmered in minimal liquid. They always taste better the second day after the greens have had time to really absorb all the flavors, so it's better to make a day ahead and store in the fridge. It also freezes well if you want to make a double batch.

Ingredients:
1 tbsp olive oil
1lb ground beef (85% lean)
1 medium onion, diced
1/2 tsp curry powder (optional)
1 14.5oz can of crushed tomatoes
2 bunches of collard greens
1 tbsp Royco Mchuzi Mix spicy beef flavor
1 cup cold/room temperature water

Directions:

1. Remove stems from greens and wash to remove any dirt/sand/grit. Chiffonade clean leaves into 1/4in strips.

2. Heat large pot over medium high heat, add oil and ground beef. Cook ground beef until browned nicely, 5-10 minutes.

3. Add onion and curry powder (optional) to pot and stir well to mix. Continue cooking until onions have softened, another 5 minutes.

4. Add diced tomatoes to pot, and add greens in batches until they've wilted enough to all fit. Stir well to mix.

5. Reduce heat to medium and cover. Simmer for 45-60 minutes, checking every 5 minutes to stir and ensure greens don't stick to the bottom of the pot. There should be enough liquid in the tomatoes and greens, do not add any additional liquid. If greens are tough, cook longer than 45 minutes until tender.

6. Prepare mchuzi mix according to directions on container, by mixing with a cup of cold water before adding to pot. Stir well to prevent scorching, and cook another 5 minutes. Taste test and add more mchuzi if greens are too bitter.

You need the technology to make the technology. For instance, agriculture and pottery are closely intertwined, because having ceramic vessels means you can now store grains and pulses over an extremely long period of time (water, too). You can't really do anything with, say, iron or copper until you can get to a certain level of heat, and to get that heat to a certain point, there's a bunch of other technology that you have to deal with.

What does writing allow us to do? First, it allows us to organize ourselves signficantly better than pretty much anything else, because thanks to writing we can go and get the tax money we need for this big society, and we can distribute that food because it's easy to create a food surplus with agriculture, so people can specialize in their jobs even more. The other thing is that it allows us to keep records for future generations, allowing them to replicate what we did and improve on it.
