Why would this ever be the case? The US has chefs from India, using recipes that they learned in India, and ingredients that are often even better quality than what you can get in much of India. So why would you need to be in India (or Pakistan, for that matter) to get "authentic" or "real" biryani? It's not as thought it's even a particularly complicated or difficult dish lmao

Funny that. Just made a biryani, it was fucking amazing. There are a lot of steps involved but it's not complicated as such. In this case, a bunch of veg was roasted with spices. A sauce was made from coconut milk and coriander. Rice was cooked, onions caramelised. Then everything is layered in a casserole and stuck in the oven for another 20 mins.

Indian place near me makes an INSANE mutton briyani that is just so flavorful I don't even understand how they do it. No other biryani I ever had is as good. I feel disappointed 90% of the time I eat it now because it isn't as good as how this one place makes it.
