Why is cooking hard as fuck? Literally every single time I try to make something, it comes out like total shit. I will find a recipe, do everything verbatim, exact measurements, everything. Comes out nothing like it. Trying to make bourbon chicken? Get dry ass chicken that looks like it was slathered with ketchup, I just made the worst pork roast after following a Cuban pork recipe. I want to save money by not eating out but what the fuck? Do I seriously need to make $500 in horrible pork roast before making a decent one? It makes literally no sense.

You finally learned why so many people dont really bother to cook for themselves and just order food.
Yes you're gonna have to waste a lot of money before it comes out as good as restaurant or better. These places that have got it down to a science and have been doing it longer than you, and do it far more often than you. It's going to take a while for you to catch up.
Food is food though so just stuff the slop down your throat, you wont go hungry, and try to cook something else tomorrow.

by the way, whenever someone says something has a steep learning curve, remind them that means it's very easy to pick up

if the curve is steep that means you acquired a lot of knowledge in a short amount of time
a shallow learning curve means something takes more time to become proficient at

Try to pan fry easy shit. Beef and seafood are very easy and pretty safe, just remember to season your fucking food. Very rarely can a dish not be improved by additional salt and pepper, in addition to a lot of other spices that you can try with various dishes.
Also, taste your food to make sure it's properly seasoned/done.

Like anything else it takes practice and don’t skimp on cookware. I figure it takes at least 3 times of doing something before you get an understanding of it. In Jiro Dreams Of Sushi his apprentice made tamago 200 times before Jiro said it was good enough to serve to customers. Obviously that’s a little extreme but you get my point. Make your chicken recipe again and if you fuck it up, make it again but learn from the previous attempts. By the 6th time you make it you’ll be ready to invite someone over to cook it for them.

Maybe if you’re retarded. I’ve barely started cooking and I’ve already made a couple of things that are as good as I’ve had at restaurants. A good recipe is one thing, but you just need to learn proper techniques and the science behind what you’re cooking. Study a lot. Watch shit like Good Eats, Ramsay’s Ultimate Cookery Course, anything where someone who knows what they’re doing offers a lot of information that you can absorb.
For example, you overcooked your chicken. You probably left it on too long. Use a meat thermometer for cooking chicken every time, and make sure you’re using the proper amount of heat. Also using dark meat like thighs makes chicken much harder to overcook because it doesn’t dry out as easily. Seriously, just study study study. Learn from others.

there are a lot of recipes online that are complete garbage. you should start with simple stuff, like cooking plain meat to a specific temperature. make sure you have the right equipment and that it's working properly, i.e. your oven is actually heating to the temperature you set. find actually good cooks who are able to write recipes in a way you can understand for more complicated recipes.
