I know this is a shit post, but someone will come along actually wanting to know the answer, so here it is.
When industrial food production started to really take off, especially after the depression and WWII, there were lots of new products available. In order to try and boost sales as much as they could companies hired marketing firms to make cookbooks and articles with new, novel recipes that featured their products. They were cranking out so much material they had to come up with increasingly bizarre combinations.

She has recipes clipped out of magazines that haven't been in print for 30 years. The women at her rotary club all make the same kind of shit.

Prior to WWI, it was pretty common for rich and middling classes to hire domestics who've typically honed their cooking skills over generations. Before refrigeration, modern canning methods, and gas/electric ovens, it was imperative for cooks to get creative and use as much of the animal as possible.

Workers being laid off left a fertile ground for food companies like Kraft to ramp up production on cheap pre made meals, a trend that continued into the post war era as women were continuing to enter the workforce leaving less time to cook. Decreasing skilled domestic workers & more "time saving" technology coincidentally created a profitable market of middle class white women who had little prior cooking skills.

When I was growing up, my grandma called butter "oleo" and coffee "sanka". My grandpa finally had enough (I'm guessing in the 80's) and outlawed margarine and instant coffee and demanded real butter and whole bean coffee. The rest of American cuisine borrows from other cultures. Bbq comes from black and jewish backgrounds, pastrami came from jewish backgrounds, spaghetti and meat sauce like a lot of us know it come from italian american cuisine, orange chicken and chow mein borrow from chinese cuisine, etc.

This was post-WWII, when the U.S. was rich and powerful and companies everywhere were trying to meet the demand from consumers for quick and easy everything, including food, which resulted in retarded shit like mayo on canned pears.

My WWII generation parents for example, (born in 1922 and 1925 respectively) drank instant coffee exclusively after the war (as did all their friends) despite growing up prior to WII with real coffee (in fact, my mom had an old school grinder hidden away in the back of the kitchen cabinet) because despite instant coffee clearly being shittier, it was gee-wiz space age stuff for them.

To add context to all this shit, the reason why mayonnaise and gelatin are so firmly central to this type of cuisine results from French-influence on American diets at the time. Gelatin itself prior to instant gelatin was horrible to make because it required hours of cooking bones and then having the gelatin actually set. By this difficulty, it became associated with much high-brow cuisine. The French also gave the savory gelatin to American cuisine such as vegetable and meat gelatins, like Ham in Aspic. Both ingredients, to the housewife, had been culturally ingrained as fancy and served the decorative aspect of these fucked up recipes.

I used to work for a company that made caulking. It was almost a monopoly. At least regionally and if you wanted the other brand you'd have to travel farther than most people would want to for a $2 product. So the company decided to make a clear color and a white color.
