I'm a Canadian and it's been a meme for a while now for brands of BBQ sauce to pump out various American regional sauces. I can say that Carolina mustard BBQ is BY FAR the best BBQ sauce there is.

Best burnt ends I've ever had were in KC. I like wet sauces too.

That being said the best overall BBQ I've ever had was in Austin, so Texas wins for me.

Carolina and Memphis don't place. Respect to the mustard-based sauces though, I like it every now and then.

Ask me how I know you've never been to a good bbq place.
Franklin's is decent for a city place run by a guy who admitted he doesn't even like bbq and is just doing it for the money. Hispters and ignorant tourists keep him open. I haven't eaten at La Barbecue, but given that they have equivalent go-fuck-yourself lines, I image it's the same.
Lockhart has better bbq. Even places in San Antonio are better. All food is subjective, but I have had friends that have made better brisket than Franklin's.
Try Kreuz Market, New Braunfels Smokehouse, or walk into a random ice house in San Antonio.
All that being said, there is no "best bbq". It's all just different, and completely subjective.
Except that pork ribs suck unless the sauce is good.

I looked up what you were saying about Aaron Franklin hating BBQ and I see his point. He works on this stuff everyday, he probably doesn’t want to eat it all the time. Do you want him to eat BBQ every meal? Would that make him a better chef?
Anyway, Franklins brisket is very solid, I thought it had a great flavor, melt in your mouth quality but not too fatty, maybe I’m ignorant. I’ve had plenty of BBQ in Texas and it’s been the best I’ve had so far. Franklins definitely is hyped up like crazy, I mean it’s in a a hyped city where people want to come to eat food. It’s accessible to the other shit in Austin so that’s why everyone wants to go. Maybe I liked it more because my brother brought me some so I didn’t have to wait in line, I’m sure the line experience sucks and whatever.
I haven’t been to Snows or Kreuz Market and I plan on eventually going, but being able to get BBQ in the city Franklins is pretty solid. It’s not even my favorite bbq joint in Austin, I like Styles Switch and Kerlins more

I think Carolina BBQ sauces are generally less sweet and more vinegary than the others (based on my limited experience, could be wrong) which I think appeals to Canadian tastes the most. Also, I'm not sure why they bother with the regions since I doubt more than 1% of Canadians are even aware there's a difference.

Texan here but I travel a lot and you're right on the money. They're also big into pickled red onions which I wish was a more widespread thing but at least we have pickled okra. Pickled green beans are another thing that could certainly stand to be more popular.
