Stainless steel, easy. Cast iron is fine for a few applications (I make my shepherd's pie base in it, sear steaks, cornbread, etc.), but stainless steel is way more versatile and much less hassle.

Stainless steel can do pretty much anything. Cast iron can be handy for when you really want the best sear, for example, but you can do it with stainless too.

That said, a cast iron pan is so fucking cheap you might as well just get one. Unless you have an aversion to owning things like me. Just don't get one of the $200 versions that are starting to appear following cast iron's resurgence in popularity.

My dad got me a stainless steel pan but I haven't used it yet. So I have to season it first? Is that a thing? I've never used steel before

One time I got gifted a stainless steel pan but everything got stuck in it, not sure if I screwed it up

Anyone own one of these 3-ply non-stick aluminium pans by Le Creuset?

I don't have any non-stick pans and they are on sale on Nazi Amazon right now.
Problem is their customer reviews are super mixed and I can't actually find any professionaly done tests for that line of pans, so really no idea if those hold up to Le Creuset's usual quality standard or are some cheap made in China garbage they pushed out for all the housewives who only care about the brand name and exclusively use non-stick for everything
