Got a carp from some guy who likes to fish and who's family doesn't like fish much.

They are muddy, yes, but only the large and old ones. You can cover it with aromatics to a degree. The young ones are very bony. There's always a tradeoff.

Chopped garlic, grated ginger, miso and fish stock from earlier became a marinade for carp.

I could, but at the time I got it, it was already dead. Not sure if it helps with muddy taste though. The best way to get rid of it is sprinkling it with some lemon juice or let the portioned carp stay in some milk overnight. I couldn't be bothered though. Garlic ginger and miso overwrite the mud fairly well..

one thing that you can do fairly easily is to remove the ribs (you need a not very sharp knife and patience though)
also lots of tiny bones along the midline of the fish which can be removed with the sacrifice of just a thin strip of flesh on either side of said midline
still bony af tho, it's one fish you can never really properly fillet, especially not the juveniles

Carp ribs don't really bother anyone. They are too large and can be really thrown out of the cooked carp. Small bones are a pain and it's bothersome to eat.

Carp is a really really cheap fish though. Especially this one. If you buy a fish at a price of a low cost hotdog, you can expect some downsides..
