Little more of the brazilian ruby roasted today. Still need to tweak my pid parameters, but I've been more than happy with these beans, despite my log. Very very creamy, nutty. Even had a shot of espresso that pulled wsy too fast, but tasted exactly like peanut butter. 120 in, pulled right at 399f.

Fantastic hardware with shit software. Luckily one of nakedportafilters customers wrote a real basic, real functional app without all the bullshit "share to facebook/twitter" junk. I bought it specifically to use with the smart profiler, but its on backorder. Works fine for pourover with a standalone scale. The Skale 2 also works, so if you want a cheaper alternative there's that.

I've been using an AWS 2kg 0.1g scale for nearly 10 years now. Has taken a lot of water and coffee right to the dome and still works perfectly. Acaias are super fast and accurate, which is a must in a cafe, but that speed at home is pretty much wasted.

Drinking this today. it's an expresso alla milk, steamed to perfection. I created the layers with rice paper separators and added an extra shot of cold espresso at the bottom which rose to the foam, hence the beautiful 'floating tortoise' style coffee holding firm above the mixture of milk and expresso. It's not easy to make, but I'll be damned if it isn't worth it for the perfect sip of light, aery Counter Culture blend coffee

I think the two brewers can make equally good coffee. I prefer to use a v60 over an aeropress, but I've made 100s of aeropresses and 1000s of v60s, and I can say they make equally good coffee. I would even go as far as to say that coffee I have had at cafes made in an aeropress has consistently been tastier than what I've had from v60s, but that's likely due to the nature of the forgiveness of immersion more than anything. That's kind of a positive for the new coffee enthusiast. It also allows for more kinds of tinkering. Both are good brewers. So you agree with me, but you still want to make a case for an overpriced toy. The whole gimmick is the pressure, and it barely does that. Its not worth the money. Its not going to make a better cup than filtering a french press. You can get an ikea fp, a v60, and filters for the same price and end up in a better spot long term. Majority of filtering will be done by the steel mesh, so you can reuse v60 filters several times. Quit recommending it. First batch was good (columbia supremo medium roast, was more fruity so I had to switch from vanilla creamer to milk and sugar). Clever is more like french press than a pour over brewer. Coffee grounds get immersed in water and sit in there until the final step where the lever on the bottom is pressed by the rim of the container you're pressing the Clever dripper onto and the coffee gets filtered quickly through the paper filter. It's not like regular pour over systems where the water continues to flow downward into the cup.

I love the taste of coffee prepared using a French Press. I also very much like the efficiency and ease of using and maintaining one. That being said, I've been reading into the potential harm of consuming coffee that doesn't use a paper filter and so I would like to get an apparatus that provides a similar taste and ease as the French Press, but uses paper filters.

I've had an Aeropress for years, but I'm not a huge fan of it. It looks cool and is fun to use, but it's a bit tedious and I find it kills the flavor so much I might as well be drinking water with food coloring in it. Just don't drink the sludge at the end. Grind the beans, put them in the press 'cup', add the water. Leave it for 4 minutes, hen stir the crust and remove the froth with a spoon. Then add the 'lid' and slightly press down and leave it for 5-8 minutes. Then fully press down just above the grounds. No sludge.

"The same" used colloquially is probably synonymous with similar. Fun sidenote: I just made a brew with my aeropress as if it were a pour over brewer.

12:168 brew ratio, boiling water, fine grind (12.5 on the 3fe dial on me EK43, burrs touching at 1, espresso grind around 4.5)
30s bloom, little swirl. 3:1 bloom.
Then poured the rest in fairly slowly, trying to control agitation, took about 20 seconds.
Then I let it sit until it was all filtered through - took about 5 minutes.
Best cup I've made recently. Super sweet and balanced.

The age old saying is if it can hit 9bars, you can pack 14 grams in, and hit it with 200+ degree water, you can make espresso. I like my flair. The robot is cool, but you can't even fit an acaia lunar under it. Espressoforge is a meme, but you can use vst baskets so thats pretty cool. You pair a flair with a good hand grinder (kinu, helor, commandante) and a kettle, you have everything to figure out if you actually want to fuck with espresso for under $500, and flairs seem to keep their value pretty well so you can flip it a year later for a minimal loss.

Not on par with more expensive Italian stuff. But doesn't need to be. The parts that matter are good. Who cares if some tubes are plastic? I changed the pressure on my opv myself. Most of build quality shit is a meme unless you expect it to last 100 years. I think they are rated for like 15k cappuccinos or something. Very high end capability, medium tier parts. A gs3 might last longer, but it's not as good, and you could replace the 920xl 5 times and still come out less expensive.

You don't really want a cheap steam boiler building up pressure on your counter. Only has to fail once to fuck up your week. Those $3000 machines will still be running in 30 years, with minimal maintenance. You can still buy cremina's from 40 years ago and pull fantastic shots the day you get it.

Grind finer. It's practically impossible to screw up. The Hoffmann method is essentially just cupping - you know, the standard method for brewing coffees for sensory evaluation. They said finer, not fine ground. I've noticed with Hoffman method that too course and you'll get a sour cup. Too fine and no matter how short you brew its bitter and burnt tasting. I find percolator setting at grocery store grinders work best.

Press is very very low agitation, so it extracts slowly. Low agitation brews will start to hit an extraction plateau around 3 minutes, after which extraction really only progresses at a crawl. Because of this, you want to grind fine to get good extraction. Also, because there is no flow through the coffee mass, there is no chance for channeling due to a grind that is too fine, like in a typical pour over brew. Only the external 100um of a coffee particle is really properly extracted, so grinding coarse just means a ton of wasted coffee. French press is the finest I grind next to espresso. Around 11 o clock on my ek43 dial.
