What is your favorite kind of fish? Also why are tuna and salmon so unique, compared to other fish? Is it related to the fact that they swim across oceans?

Baked some fresh Tsipoura (Gilt-head bream) with olive oil, lemon slices and rosemary sprigs in tinfoil a couple of days ago. Great-tasting fresh fish and easy to remove the bones.

I live in Hawaii, so pretty much everything is way too expensive, except that every now and then some tourist boat will land a shitload of swordfish or marlin and it'll be cheaper than frozen chicken for a few days.
Great fish to marinate and grill, basically treat it like beef.

Lately I've been super into tuna because my local grocery store has had it cheap. ~$5 for 2 tuna steaks that I cook with a little cayenne, black pepper, salt, butter and oil and with minimal effort they turn out fantastic. I was nervous when I first made some, same with standard beef steak, but after making it a few times it seems like nothing. My overall favorite dish is mackerel but I don't eat it outside of restaurants or cans because my LGS doesn't carry it.

Skate wing with a bunch of butter. Haddock is also pretty great. Rainbow trout and arctic char are also good choices. Fish is pretty damn great all around

What specifically do you dislike?

I used to hate fish until I actually had it fresh. Fresh as in I caught it and within 15 minutes had it gutted and cooking in a pan just with garlic salt. Good flavor, not that typical super "fishy" taste and smell.

I prefer Salmon obviously; but herring family fishies are good too, this would include sardines.

Mackerel too, highly underrated.

And anchovies for sauces.

I like most fish but since I live close to the gulf I mostly eat fish that come from there. Red snapper redfish amberjack flounder grouper dauphin are most of the Staples. I catch alot of mackerel (Spanish and King) but it's not my favorite. The best if probably grilled snapper throats. The meat is very close to the cheek piece absolutely delicious!

I love a grilled Norwegian mackerel. They're so oily that they taste buttery. You don't even have to season them if you don't want to. A little pinch of salt and you're good to go.

I like the crispy top layer the best. They have an easy to remove spine and maybe about 5 or 6 smaller bones in the fillet, but once those are pulled out, it's a BIG fleshy fish and it's so satisfying.
