This, why do people just assume you have to eat soy if you go veggie. There are whole civilizations that don't even eat meat and make a bunch of varied veggie dishes. If you want good tasting food I'd suggest looking up West Indian (carribean) dishes, a lot involve veggie options like okra/bodi/pumpkin/chana/spinach (bahji/Callaloo)/dahl and rice/various potato dishes and it isn't like east indian dishes where it's overwhelming and drowned in a bunch of sauce. Obviously you have to find good recipes and make it right, the main reason why so many dishes exist and taste good is because meat is expensive in those countries so the alternative is making veggie dishes outclass meat.
