I love cooking and I love food but I have to admit I have tried soups and stews with and without them many times and I struggle to tell a difference. I still use them if the recipe calls for it but I always wonder if the leaf creates the flavor or if it's my brain telling me there is more flavor.

bay leaves are definitely not a meme. We have a mature tree in our garden and we use them both fresh and dried. They impart a savoury/musty/resin like flavour to things. I put a few in my pasta water and they give it a subtle savoury (umami like) boost. Also surprisingly good in steamed sponge pudding (put one in the bottom of the bowl with batter on top), bechamel/pasta sauce, herbal tea with a stick of cinnamon, boiled with beans and lentils, with a roast chicken or grilled mackerel etc. Open your mind OP

I mean just smell the leaf and or toast it in a pan. Then add it to your stew, then smell the combination. It should be pretty clear, they have a distinctive smell. It's an aromatic that's used in a ton of shit, very recognizable.
