Oi, hope you've been making good shit while the world is on fire. This is garlic ginger marinated short rib over risotto made with homemade beef stock. Easily the highest quality item I've ever made at home (I've made crazy shit in redtaurants though).

Let's talk about projects. Ongoing, results, theorycrafting, just don't be a cunt and we're good.

I'm trying to make some black garlic, but I don't want to have a bomb on my counter that smells like death for 4 weeks (plus I want to use my pressure cooker in the meantime). I was thinking sous vide. Anyone have experience with it?

Damn, don't know why it rotated like that, anyway here's the stock (pre-strain). It was 1.5 lbs of marrow bones, a large onion, 2 carrots, bay leaf, and black peppercorns. It was super clean but rich and had a great mouthfeel at the same time.

This is the shortrib, i sous vide it at 115 for 3~ hours then broiled it. I did about a clove of garlic and an inch of ginger per piece of meat, splash of soy sauce, pat of butter. Turned out perfectly rare/medium rare, and eas bursting with flavor. It was bog standard risotto with parm, salt and black pepper, stock, and a bit of grated garlic and ginger to tie it together. Garnish with a bit of soy sauce and extra parm and some greens if you have em.

Gotta say, super worth the investment. If you arent doing anything else in quarantine make some bomb ass food, it's very gratifying.

Also pic is homemade orange chicken from last night, best orange chicken I've ever had.

I haven’t been making shit. I made a new batch of stew early into the lockdown that fed me for a few days. I’ve mostly been eating frozen food, canned soup and ultra basics like grilled cheeses or scrambled eggs. I spent $160 on food a couple days before they shit the state down and I haven’t gone to the grocery store since. That was just under two months ago. I’m down to eating ~1000 calories a day and I’ve been losing weight. When I do finally break down and go to the store I’ll pick up some fresh vegetables and potatoes to make this meal again with some frozen beef I have. That will feed me for another 4 days.
