Bread machine all day. I do tend to use it more for dough rather than to make and bake a whole loaf though. The bread machine yields slices that are too big for our liking.
The first dough I ever made in it was roll dough and I've made it probably 20 times since, perfection.

Bread machines are a greater labour saving device than the vaccum cleaner.

I never actually bake in it, just use it on the dough setting all the time. Sometimes I interrupt the rising part of the cycle too, if I want to do something weird with it.
My bench mixer can knead too but not as well as the bread machine really, it has trouble incorporating stuff though it works ok once the dough is a ball.

Since I'm usually making high hydration sourdough loaves it's easier to just do stretch folds every couple hours.
If I had a mixer I would totally use it for brioche/Challah/or any enriched dough. That shit takes forever.

Me too, I take the dough ball out after it's done kneading and shape it and let it proof for around 1.5 hours in whatever I'm baking it in, then I pop it in the oven.
The seal on my bread machine pan is completely gone, so what I do is pour in 100% hydration dough then the rest of the flour, to get the dough without adding liquids, which could leak.

Ever try no-knead brioche? You can mix the initial ingredients with a spatula, and you skip having to soften the butter and incorporate it in stages since you throw it in all at once when it’s melted. How can people work with doughs that are lough hydration like for a ramen or pasta dough? I tried to make 40% hydration ramen noodles and it was basically impossible to work with. Unbelievably dry, couldn't form gluten chains to save my life, and it was constantly crumbling apart.
