Add more flour. If they're falling apart when you boil, it's because they don't have enough binding in them.

When you're making the gnocchi, leave a pot with some boiling water on the side, and test your dough by putting one piece of it and waiting for it to cook. If it falls apart, it needs more flour. Always err on the side of caution, because if you add too much flour, they'll come out rubbery.

- Bake whole potatoes in oven still soft.

- scoop out insides (eat crispy potatoes skins)

- mix insides with salt pepper butter flour nutmeg and soft cheese in pan over low heat.

- knead dough mixture - make into dumplings

- parboil

- drain and let cool

- pan fry in butter until outside a little brown and crispy

So good.
