reminder that you have to refrigerate your eggs if you live in the US but not if you're in Europe because the US and Europe produce their eggs differently. europeans have this outer layer on the eggs that eliminated the need for refrigeration while US eggs go through this washing and pasteurization process that removes that coating and thus requires eggs be refrigerated to stay fresher longer.

As an American I don't really care that our eggs need to be refrigerated. We all have refrigerators over here
It does bother me that the eggs are pasteurized though, it affects the flavor in a pretty big way. Also nobody around here even eats raw eggs so I don't even know what the point is. I've got laying hens and the eggs from my chickens are vastly superior to store bought eggs, there is also a lot of demand for small farm non-pasteurized eggs so I'm not the only one who prefers them this way

I'd even say in general Americans prefer to cook their eggs harder than most other cultures. We'd prefer to hard boil them than soft boil them. We cook them till they're totally firm with no. I don't know anybody around here that wants "sloppy" eggs.
They also mostly get used in baked goods, an application that benefits greatly from non pasteurized eggs. Most eggs get used in an industrial food processing setting so i suppose there is an advantage of having pasteurized eggs when working at that scale (to avoid salmonella)
