I've been buying mediocre chicken patties and hitting them with some good mustard and sriracha. Delicious.
Once the sriracha is done I'm gonna pop open the wasabi. It goes great with fish and beef so chicken should work too I think.

This is one of my favorites.
I am partial to mustard with whole seeds mixed in to mushed up seeds.
I am also partial to mustard that have a very clear flavor of mustard - I don't like horse radish or something else to dominate. I am also partial to mustard that is a little sweet.

I put mustard on sausage, Ham, beef, Salmon, in dressings, pork, chicken, potatoes and root vegetables in general. Some offal food is nice with mustard too: Sweetbread, different types of beef stomach and intestines all work well with mustard imo.

Generally, I prefer mustard with food that has at least a decent amount of fat in it.
