Mix ground beef with ground pork in like a 2:1 or 3:1 ratio. Did this after somebody at a butcher workshop session mentioned the best burgers they had were like this, it really does turn out delicious

Best Burger I've had in quite some time

>Form 1/4-1/3 pound patties, should be flat but not smashed

>roll edge in black pepper and a bit of kosher salt

>sautee onions

>grill or cook in cast iron skillet

>add onions and mild cheddar cheese to burger while it's still cooking

>prep all other toppings and special sauce well before hand, shredded lettuce should be very lightly dressed with S&P, lemon, and olive oil.

>bottom bun, special sauce, burger, bacon, shredded lettuce, tomato, special sauce on top bun with sesame seeds.

Special Sauce Ingredients:
>40% mayo
>40% yellow mustard
>20% ketchup
>Finely chopped pickles
>finely chopped pickled jalapenos
>finely chopped shallots

Also highly recommend lightly dressing you lettuce before you put it on the burger. It is stupid good.
