Why do you weight small amount of something?

I tried to weight 5 gr of salt and it gives me completely different result with the same amount

I just add and then divide in half if possible. I had to do that with yeast. I also own multiple scales and one is good to measure out to the tenth of a gram. you could always go that route. you can find those types of scales at any pawn shop for really cheap or just order one online.

You need a little spice scale. It seems silly when you already have a kitchen scale for baking, but it's great for yeast, salt, etc.
