There's several species of dandelion.

Eat them before they flower. Don't have a recipe but my mother used to make a dandelion salad with egg yolk, vinegar, and sugar dressing. Toss with bacon.

I remember as a kid I read about dandelion milk in a book, so I picked a dandelion in the back yard, ripped the stem, and licked the white liquid inside

It was the most foul and bitter thing I've ever tasted in my life, I immediately ran inside to wash my mouth out, did it for 5 minutes, and the taste still wouldn't go away for a good hour

You pick them young and they aren't bitter. The older leaves can be blanched in a couple changes of water and they aren't bitter either.

Given the food shortages we're facing here in late stage capitalist US, I've been collecting wild plants. Spiny lettuce and plantains are coming up here in zone 7b. Cut some bamboo shoots a couple days ago, peeled them, blanched in salt water and did them in a ginger, garlic, hot pepper, soy sauce, fish sauce stir fry that was very tasty. Similar to fresh asparagus.

Also, i find leafy greens to be too tedious to forage for, mushrooms and berries are pretty much the only worthwhile wild edibles.
